When Luke's Lobster founder Luke Holden first coined the multi-million dollar restaurant group and seafood company's ethos of "from ocean to plate"—a promise they've upheld through the years, from a single East Village lobster roll shack in 2009 to the certified B Corporation today that's powering an international lobster roll craze, all thanks to a wholly-owned supply chain at the heart of its value proposition—one would suspect he didn't imagine the plate being halfway across the world, on the ground floor of a departmental store in Singapore, between beauty counters as a pandemic rages on.
